Chopped Salad with Pistachio Vinaigrette Salad Recipe


  • 1 bunch watercress
  • 1 bunch pea shoots
  • 1 small bunch fresh basil, sliced into thin ribbons
  • 1 avocado, sliced
  • 7 radishes, sliced into coins of various thickness
  • ½ English cucumber, cut in half then sliced
  • 1 ear corn, cut kernels from cob
  • 1 handful green beans, trimmed and cut in half
  • Radish sprouts

For the pistachio vinaigrette:

  • 50g pistachios, finely ground
  • 1 lemon, juice and rind, finely grated
  • 100ml olive oil
  • 1 tbsp agave
  • Salt and pepper to taste


  • Step 1: Put all the ingredients for the pistachio vinaigrette into a small bowl and whisk until incorporated.
  • Step 2: Combine the salad ingredients into a bowl and toss with the pistachio vinaigrette.
  • Step 3: Top with radish sprouts and enjoy.
