Simple Seed Muesli with Nectarine and Blueberries Recipe

Method

1. Heat a frying pan, add the oats and seeds and dry-fry for about 5 minutes until the mixture is light brown and crisp, stirring constantly. Tip into a bowl and leave to cool.

2. Stir in the dried blueberries, then top with the yogurt and nectarine slices and serve.

Blueberries...

...are full of potent phytochemicals called anthocyanidins. They are regarded as an immune-boosting superfood, thought to protect against cataracts, glaucoma, varicose veins, haemorrhoids, heart disease and cancer.

Pumpkin seeds...

...are rich in zinc, which is important for normal growth in children, healthy sexual function and the immune system. They also contain vitamin E and the minerals iron, copper, manganese and magnesium.

Oats...

...are a good source of energy-giving carbohydrates and are also high in B vitamins and vitamin E and the minerals calcium, magnesium, iron and zinc.
