Raw Beetroot, Lentil And Mint Salad With Orange Dressing Recipe




  • ½ a medium orange
  • 1 spring onion
  • Handful salad leaves
  • 2 sprigs fresh mint
  • 1 tbsp white wine vinegar
  • 80g puy/green lentils, ready cooked
  • Zest of ½ an orange
  • 2 tsp Udo’s Choice Ultimate Oil Blend
  • 110g raw beetroot


1. Rinse and drain the lentils and place them in a mixing bowl.

2. Put on a pair of food gloves, peel the raw beetroot, grate it finely and add it to the lentils.

3. Add in the sliced spring onion, chopped mint, Ultimate Oil Blend, vinegar, orange zest and the peeled and segmented orange, plus any juice and mix well.

4. Finally, season the salad as required and serve on a bed of mixed leaves.
